Years ago, I learned to make this dish from a friend. His parents were Jamaican and he explained that this was a dish they ate as comfort food. It isn’t pretty, but it sure is tasty.
The recipe in the first photo is my improvisation of what he taught me. The portions may be off, but it’s the way I like it. Please feel free to adjust everything to your own taste. I also like to make dumplings by hand. I found this recipe online so I tried it for the first time tonight. It was pretty good.
